This guide explores those common patterns, but please note that this is designed to be a framework for understanding, not a set of instructions. It is important to remember that the maximum daily dosage for Aperitif is three capsules per 24-hour period. The patterns discussed here all respect this limit.

The Guiding Principles: DAO and Your Histamine Bucket

Before looking at the patterns, it helps to quickly recap two core concepts. Your body deals with two types of histamine: internal histamine (produced by your body in response to stress or allergens) and external histamine (ingested from food and drink).

Diamine oxidase (DAO) is the primary enzyme your body produces to break down external, or dietary, histamine in your gut. For many people, an insufficiency of this enzyme, known as DAO deficiency, is a key factor in their histamine intolerance. When there is not enough DAO to break down the histamine you consume, it can be absorbed into the bloodstream, contributing to your overall histamine load and potentially causing your bucket to overflow.

A DAO food supplement is designed to be taken 15 to 20 minutes before a meal to supplement your body's own supply of the enzyme, helping with the digestion of histamine from that meal.

Common Use Patterns 

Based on what we have learned from our community, people’s use of Aperitif often falls into one of a few common patterns. These are simply observations that reflect different diets, lifestyles, and individual needs. 

Pattern A: The Daily Support Approach

Some people find it helpful to take one capsule 15 to 20 minutes before each of their three main meals: breakfast, lunch, and dinner. This steady, distributed approach is often adopted by those who have a lower natural DAO capacity and find that a wide variety of foods contribute to their histamine bucket throughout the day. By taking one capsule before each meal, they spread their DAO support across their daily food intake, using the maximum of three capsules over the 24-hour period.

Pattern B: The Main Meal Focus

Another common pattern is to focus the daily allowance on one specific meal. This person might have a consistently low-histamine breakfast and lunch (like fresh fruit and a simple salad) and therefore not feel the need for DAO support at those times. However, their evening meal might be more complex, involving higher-histamine ingredients like aged cheese, leftovers, fermented foods, or a glass of wine. In this scenario, they might take two or even three capsules 15 to 20 minutes before that single meal, using their full daily allowance to support the digestion of a more challenging plate of food.

Pattern C: The Occasional, Event-Led Approach

This pattern is for the person who manages their histamine load well through their diet on a day-to-day basis but wants support for specific, predictable situations. They might not use Aperitif every day. Instead, they keep it on hand for social events like a restaurant dinner, a summer BBQ, or a party where they know the food options might be limited or high in histamine. For them, taking one or two capsules before a specific event gives them a tool for navigating occasions that fall outside their normal routine.

Pattern D: The Wine-Focused Approach

A notable group of people use Aperitif almost exclusively when they plan to have a glass of wine. As a fermented beverage, wine is a significant source of dietary histamine for many. For individuals whose histamine bucket is otherwise well-managed, wine can be a primary trigger. Using one or two capsules 15 to 20 minutes before enjoying a glass is a legitimate and focused way to use a DAO supplement, targeting a specific and known source of external histamine.
