Rosie has been a Dietician for the NHS for seven years, and more recently has been specialising in allergies.

Nichola Williams is a registered dietitian with over 15 years of NHS experience, specialising in gastroenterology and working extensively with patients experiencing complex functional gut disorders. Nichola now runs The Dietary Edit, supporting adults through evidence-based, practical strategies to manage reactions. She is the creator of The Unrestricted Method, a structured program designed to help people understand and manage histamine intolerance without overly restrictive diets.

A Dietitian with over 13 years experience working in the NHS. She now runs her own business @thecalmgutdietitian, specialising in gut health, histamine intolerance, MCAS, Long Covid and PoTS. She is on the dietetic advisory board for two charities: The IBS Network, the national charity for those with IBS, and Mast Cell Action, the national charity for those with MCAS.
